What’s for Dinner? Wild Caught Soy Ginger Cod with Veg

Do I sound like Jamie Oliver when I say “veg”?

Earlier this week, Handsome Hubby called to say that he’d be home in about 30 minutes and I hadn’t done anything for dinner except thaw some fish. I punted. I thanked God that I had a lot of veg in the freezer, already prepped. I chopped some not-frozen onion and garlic, started that sauteing, put the fish (that thankfully comes pre-marinated) in the oven for 10 minutes. Then I grabbed artichoke hearts and peas from the freezer. After the onion was cooked, I tossed the frozen veggies in with a little chicken broth and when they were hot, I put it all in the pan together with plenty of Celtic salt and fresh ground pepper. Yum! I love pre-marinated frozen fish from Trader Joe’s! I also appreciate that the soy is fermented (in the form of soy sauce and miso), since we try not to consume unfermented soy. It’s also wild caught (we avoid farm-raised fish as well).  This wasn’t a high-fives-all-around dinner, I think partly because Kent never likes fish, but it tasted good and it was super easy!

For future reference, I think the frozen artichoke hearts would taste even better with fish flavored with lemon butter. TJs sells a lemon pepper spice blend that is super easy and delish. Just mix it with lemon juice and butter for an awesome sauce for any fish.

If you keep this type of thing in your freezer (and fresh onions and garlic in your pantry), then you’ll be ready to go at a moments notice. I’m not saying it’s not important to eat fresh food, but sometimes it’s late, and you’re hungry, and so you punt.
